SOIL: Gravel glacis

GRAPE VARIETIES: Vermentino (45hl/ha), Grenache Blanc (50hl/ha).

VINIFICATION : Direct pressing and cold clarification. Vermentino and Grenache Blanc are harvested before full matu- rity and vinified in temperature-controlled tank.

MATURING : Blending of the tank and the casks in January and bottling in March.

TASTING : Pale, brilliant hue, with green tints. The nose opens with fresh notes of lemon and pear. The palate is very smooth and tonic. The natural freshness of this terroir is to be found in the expression of this white wine. When served at 12°C (54°F), it will make a worthy accompani- ment for pan-fried scallops; one might even try it with a mildly-spiced chicken tajine.
