SOIL: Gravel limetone.

GRAPE VARIETIES: Mourvèdre (35hl/ha), Grenache (40hl/ha), Cinsault (40hl/ha). Selection from the best plots of Mourvèdre. Worked specifically to limit yields by green harvests on Mourvèdre.

VINIFICATION: Haversted by hand and placed in small trays to avoid damaging the grapes. The Mourvèdre grapes are vinified in their entirely (carbonic maceration). Grenache and Cinsault are destalked. Long maceration of 3 to 4 weeks.

MATURING: Matured in French oak barrels of 225l. for 14 to 16 months.

TASTING: This blend is dominated by the Mourvèdre, with hints of Grenache and Cinsault and has notes of candied cherries and cocoa from the lovliestl Grenache grapes and the freshness of mint and pepper from a fully matured Mourvèdre. With dense but velvety tannins, the palate is enhanced by hints of toast, followed by candied red berries (Morello cherries and wild strawberries), rather elegant, full and long. A wine which will charm you with its power and freshness. Serve at 16-18°C, this wine is the ideal accompaniment for big feasts: partridge or wood pigeon on the spit or a wild boar casserole.
