SOIL: Alluvium and clay-limestone terraces.

GRAPE VARIETIES: Grenache, Syrah, Cinsault vines. Yield from 30 to 35hl/ha, limited production due to the rather poor ground. Selection from the best plots of Syrah.

VINIFICATION: Harvested by hand and placed in small trays to avoid damaging the grapes. The Syrah grapes are vinified in their entirety (carbonic maceration). Grenache and Cinsault are destalked. Long maceration of 3 to 4 weeks.

MATURING: The Syrah is matured in new oak, the Grenache and Cinsault are matured in 2-3 year old oak for 14-16 months. Afterwards matured for one year in the bottle. Afterwards matured for one year in the bottle.

TASTING: The first nose is characterized by the soil, with notes of smoke, balsamic and mint and a hint of graphite. On the palate, gentle notes of mocha and dark fruit (ripe blueberry) take over, accompanied by velvety, recognizable tannins. An aftertaste of tobacco and the licorice stick. This wine has a disci- plined finish joining both strength and elegance, all on a very fresh scale. Serve at 16°C, wtih marinated game, or simply grilled fillet steak with wild mushrooms.
