MOUNT BAUDILE IGP

SOIL: Gravel.

GRAPE VARIETIES: Cinsault (50hl/ha), Mourvèdre (40hl/ha) and Syrah (40hl/ha).

VINIFICATION: Destalked harvest. Vinification to help flexibility: gentle extraction by pumping over in closed tanks from 10 to 15 days.

MATURING: Matured in tanks and early bottling in Spring, to preserve the maximum of fruit in the bottle.

TASTING: The Cinsault and the Syrah give this wine its crisp and fruity character. The Mourvèdre brings the peppered notes. Supple on the palate, fruity and round, very greedy Serve slightly chilled at 16°C, with a plate of Lacaune, Averyon grilled sausage accompanied with an Aubrac ’aligot’.
